THE PALENQUE

ARTISANAL MEZCAL PRODUCTION

The Palenque is the place where mezcal is produced. This place manifests the ancient relationship between the culture of the region and the maguey plant.

OUR PROCESS

The palenque of Mezcales Milagrito is located in Santiago Matatlán, Oaxaca.

We use a pit oven to cook the agave hearts.

The hearts are covered while cooking in the oven.

We use the traditional stone mill to extract the agave honey.

The fermentation is done naturally in wooden vats with well water.

The distillation is carried out in copper stills.

A second distillation is carried out to obtain a higher alcohol content.

PRODUCTION

At Mezcales Milagrito, we can produce mezcal under your own brand. If you want to give it as a gift for a special occasion or distribute it yourself, we will advise you and accompany you in the process from the time the seed is planted until the bottle is served.

La Clandestina opened its doors in 2009. In 2012, La Lavandería Nocturna was born right next door — a place to sit down and enjoy traditional Oaxacan antojitos. As everything transforms, we have decided to bring both places together under one name: La Clandestina. Same house, same quality of mezcal we have always produced.
